Dried fruits have been used as delicious and benefic snacks since ancient ages till now. History of the fig

Fig is one of the oldest plants which the humans have grown and cultivated. There are 9 fossils from the Paleolithic period (9200-9400 B.C), have been discovered around the Jordan valleys, in 13 kilometers north of Jericho. Interestingly, scientists believe that the fig is the first fruit which has been cultivated by humans, 1000 years before the wheat and grain.
In Iran, it is said that there is a village, called Samangan, which is known as origin of the fig in this country.
The fig’s name is seen in the religious texts, as well and is counted as a holy plant or fruit like the Bible, Quran, Torah, etc. In the ancient Greece, Rome and Egypt people respected to the fig as a holy plant and also utilized that for some medical purposes.

The amount of fig production in all over the world is almost 1 million tons per year and Turkey, with 255 thousand tons per year, holds the first place in amount of production among the countries which grow and produce the fig. Iran is in the fourth place with 80 thousand tons of fig production per year and sufficiently provides the demand of markets in many other countries in addition to its domestic market. There are many of different species of fig that are grown throughout Iran.
In Iran, Fars province, one of southern provinces of the country, holds the highest amount fig plantation and production so that provides almost 95 percent of fig products in Iran. If you want to eat the fig and enjoy the taste of a benefic and tonic fruit, you can have it in two forms, containing fresh and dried fig. Dried figs have some advantages in comparison to fresh figs, including more permanence and better taste.
According to the nutrition studies, every 100 grams of Iranian dried fig provide 249 Calories which consist of 92 percents of carbohydrate, 4 percents of protein and 3 percents of fat. Fig’s carbohydrates include sucrose and dietary fiber so that it is a good source of dietary fiber. [Read more]

Different types of (dried) figs

Based on texture and color, figs are divided into 150 species. However, there are three major kinds of edible figs including common fig, Smyrna fig and San Pedro fig.
1. The common fig’s flowers are all female having no need to pollination, which means they can grow and develop wildly. Some known and important types of common fig are Adriatic, Kadota, Brown Turkey, Black Mission, Celeste, etc.
2. The Smyrna fig is considered as the most important commercial type of fig, especially in Iran’s market. Unlike to the common fig, this type of fig needs pollination to make flower. And its fruit falls from tree before developing completely. The Smyrna fig its own is divided into several kinds including Black, Green, etc. It’s important to know that the majority of figs produced in Iran consist of the Smyrna’s green type.
3. San Pedro fig crops are produced in two stages. The first stage is more important needing no pollination while the second stage requires pollination in order to retain fruit on tree (until development of fruit is complete). The San Pedro fig has some kinds as well, such as San Pedro, Desert King and Lampeira.
As we mentioned, fruit’s color is one factor used for differentiate types of edible figs, so that figs are classified into kinds of black, green or yellow.
In the following context we are going to discuss about some types of edible figs in more details:
Adriatic fig: This type of fig has a pale green color and its internal part’s color is red. Adriatic fig holds less sweet taste in comparison to other types and is often eaten in dried form.

Brown Turkey fig: This is a juicy, sweet type of fig consumed both fresh and dried form.

Calimyrna fig: This type of fig is bigger and less juicy in comparison to others, having a thick green shell and a white flesh. Calimyrna fig is not such sweet and is often used in dried form. If you want to eat fresh Calimyrna fig, you need to remove its shell at first.

Celeste fig: The Celeste fig is too sweet and juicy covering by a violet shell. Its size is small and is used in both fresh and dried forms.

Kadota fig: The Kadota fig is covered by a yellow or green thick shell having an intermediate size. It also has a white or pink sweet core.

Mission fig: This type is so tasty, juicy and fleshy. Its color is similar to eggplant and its flesh’s color is red. Mission fig is consumed in both fresh and dried types.

Desert King fig: As we mentioned at previous paragraphs, King fig is produced in two stages. Its ripe fruit’s color is yellowish green.

Commercial types of Iranian dried figs

Based on quality levels, Iranian dried figs are divided into several grades and in this content, we’re going to discuss about features of them separately. There are many commercial types of fig in Iran’s domestic market but those types which are packed to export to other countries consist of these items:
Dried fig grade 101 (AAA): This is the most expensive and also the highest quality type of dried figs, having a bright color (yellow or white). Its size is huge, more than 24 millimeters and is completely opened mouth.

Dried fig grade 101 (AA): This type’s color is almost similar to the previous one (bright yellow or white) but its size is a little smaller than grade 101 AAA. Most percentage of this type’s kernels consists of opened mouth while a little percentage of them is the dark kernels.

Dried fig grade 101 (A): This type includes bright kernels  (yellow or white) with a size between 14 to 22 millimeters. Grade 101 A kernels consist of at least 25 percents of opened mouth ones and almost 15 percents of dark kernels.

Dried fig grade AA: Having an average size about 20 millimeters and bright color. Grade AA includes at least 45 % of opened mouth kernels and about 4 % of dark kernels.

Dried fig grade A: This type of dried figs includes yellow or brown kernels having average size of 20 millimeters. Majority of grade A’s kernels are closed mouth while about 25 % of them are opened mouth.

Dried fig grade B: Grade B dried figs consist of brown or gray kernels which have 14 millimeters size. This type’s kernels are mostly closed mouth while about 3 % of them are opened mouth.

Because of variety in size, quality, color and some other factors like these, Iranian dried figs don’t have a certain price in everywhere. So we see that the price of Iranian dried figs vary from 3-4 to more than 12 dollars per kilogram.
